Spicy Black Bean Burgers
serves 4
Ingredients
4 slices stale bread
2 T olive oil
1½ cups chopped onions
4 garlic cloves, minced
1 T fresh ginger, minced
½ t allspice
½ t nutmeg
1½ cups cooked black beans- fresh or canned
1½ cups cooked rice
½ habanero pepper or 1 jalapeno pepper, chopped
Salt and fresh cracked pepper to taste
Grind bread to crumbs in a food processor and transfer to a large bowl. In a large sauté pan, heat 1 T of the oil over medium heat. Add the onions, and sauté for 5 minutes. Add the garlic, ginger, allspice and nutmeg and cook for 2 minutes more. Put the mixture into a food processor. Add the black beans, rice, jalapeno pepper and pulse the ingredients to a rough mixture. Transfer to the bowl with breadcrumbs. Season with salt and pepper and stir to combine. Form mixture in 4 burgers and refrigerate for 30 minutes. In a large sauté pan, heat 1 tbsp oil over medium heat. Cook the burgers for about 4 minutes per side, until a dark brown crust forms.
